What To Do With Over Ripe Bananas

Some of us might have grabbed one too many bananas when we stocked up on groceries last. Which I understand, we are trying to avoid needing to go back out to the store during this Coronavirus outbreak and stay home orders.

Your produce may just be on it’s last leg and if that’s the case and you’re looking for ways to salvage those over ripe bananas, you’re in luck! I have three EASY recipes for ripe or in our case, over-ripe, bananas. And the best part is that the other ingredients needed in each of the recipes below you probably already have in your refrigerator and/or pantry.

Banana Pancakes FOR BREAKFAST!

Ingredients:

1 medium egg
1 ripe banana (the more ripe your banana, the sweeter your pancakes)
2 tbsp whole wheat flour
(Optional: Cinnamon - or your preferred spice - to taste!)

Directions:

1. In a medium sized mixing bowl, mash banana and stir in egg and whole wheat flour until fully combined.
2. Place skillet on a stove over medium heat, spray with PAM or grease with butter.
3. Pour banana pancake mixture on a skillet and cook both sides until lightly browned and no longer raw.

[Makes about 3 pancakes, so feel free to double the recipe should you need to feed an army.]


Healthier-ish chocolate chip Cookies!


I originally discovered this recipe from The Domestic Geek on Youtube! I love her recipes. She calls them Breakfast Cookies, I call them Healthier-ish Chocolate Chip Cookies. Be sure to check out her Youtube video for other topping ideas if chocolate chips aren’t your thing.


Ingredients:

2 ripe bananas (the more ripe your banana, the sweeter the cookies)
1 cup of rolled oats
1/2 cup of peanut butter (or your preferred nut butter)
1/4 cup of agave or honey
1/2 cup of chocolate chips
(Optional: Cinnamon to taste! And 1 cup of cooked quinoa to make these cookies healthier and heartier!)

Directions:

1. In a large bowl, mash bananas with a potato smasher or fork.
2. Mix in your wet ingredients (peanut butter and honey).
3. Add rolled oats (and quinoa if you wish).
4. Stir in chocolate chips (or whatever preferred topping you decide)
5. Spoon dough onto a parchment-lined baking sheet and bake at 375 degrees for 20 minutes.

ALL THE SMOOTHIES!

As you can see, we are a smoothie family! Hands down it is one of the easiest ways to get your fruit and veggie intake in. Over ripe bananas help to naturally sweetened all your smoothies, so don’t toss those bananas out just yet! Save them for a good smoothie*.

*My smoothie liquid base preference is always almond milk, however these smoothies can be made with your personal preference of milks, nut butters and sweeteners. Feel free to omit anything you wish or substitute as needed!

Blueberry Avocado Smoothie

  • Blend together 1 cup of almond milk, 1 medium ripe banana, 4-5 frozen avocado chunks, 1 tbsp of PB, handful of blueberries, dash of honey and ice.

Red Velvet Smoothie

  • Blend together 1 cup of almond milk, 1 medium ripe banana, 1 scoop of your favorite chocolate protein powder, handful of strawberries and raspberries, and ice.

Green Berry Smoothie

  • Blend together 1 cup of almond milk, 1 medium ripe banana, 1 cup of spinach, 3-4 strawberries, 2 tbsp of flax seeds, dash of cinnamon and honey, and ice.

Mixed Berry Smoothie

  • Blend together 1 cup of almond milk, 1 medium ripe banana, 1/4 cup of dewberries (or blue or black), 1/4 cup of strawberries, 2 tbsp of flax seeds, dash of honey, and ice.

Strawberry Banana Smoothie

  • Blend together 1 cup of almond milk, 1 medium ripe banana, 1/2 cup of fresh or frozen strawberries, 2 tbsp of peanut butter, dash of honey, and ice.
